What is Specialty Coffee?

Of all the coffees produced throughout the world, today only a small percentage are exceptional enough to be classified as specialty coffee. To produce specialty coffee, man and nature join hands to nurture selected Arabica trees from seedling to maturity. The path is neither short nor easy. Seedlings can take as long as five years to begin yeilding harvestable fruit and special care is needed each step along the way. Nutrient-rich soil must be complimented by the right climatic conditions - a synergetic combination of sun and shade, not too much wind, and just enough rainfall. Once nature has contributed its part, harvesting must also be done to stringent standards. With washed coffees, only ripe coffee cherries at the peak of maturity are selected. Once picked, these ripe cherries must begin to be processed within 24 hours to preserve their highest quality and avoid spoilage, Processing begins with further sorting followed by careful pulping, fermenting, washing and drying, each step requiring meticulous precision. Once dried, the coffee must be hulled, sized, graded, sorted, and bagged for export. Even here proper storage and shipment are critical for preserving the fresh, lively character of specialty coffee. Certainly one of the keys to getting the most out of any coffee is selecting the roasting profile that produces the most desirable flavor. WCSC is pleased to consult with our customers about taste profiles on all our coffees for a variety of roast degrees from light to dark. Of course the final judgement is always yours, but we want to do our part in being a valuable member of your team.

Comparison and Blind Cupping

Judging which coffee is best is really a relative assessment. By comparison cupping samples from the same region, a coffees relative merits are more easily ascertained. Blind cupping offers the most stringent examination. Only truly special coffees will stand apart from the crowd. WCSC invites all our customers to put our coffees on a blind tasting.
